By Julien (Nonna bar, in Caen) : “We wanted to create a simple and applelicious cocktail, but not too sweet. It’s a very greedy cocktail, quite round and slightly spiced up by the acidity of the shrub.”
ingredients
30 ml Calvados
30 ml shrub
20 ml aquafaba
40 ml Pommeau de Normandie
Garnish : 1 Normandy biscuit
Ice the glass, first.
In the shaker, pour all the ingredients and the ice.
Shake once.
Strain to remove the ice.
Shake a second time without ice (dry shake) to obtain the texture.
Pour into the glass through a small strainer to get a smooth texture.
Then grate the Normandy biscuit.
